Paleo friendly, gluten free, grain free and dairy free - this superfood filled recipe makes healthy fats, fiber, and protein quick and easy! These muffins are a great breakfast to make ahead or take with you on the go, and can help fuel you through an afternoon slump. I used a vanilla collagen powder for added flavor, protein, and a plethora of health benefits. The trail mix blend I chose included raw cashews, coconut flakes, dried mulberries, goji berries, and cacao nibs for the perfect amount of natural sweetness and flavor plus antioxidants and healthy fats!

Ingredients:
1 Cup Cassava Flour
1 Cup Almond Flour
1/4 Cup Coconut Flour
2 Scoops Vanilla Collagen Powder (or protein powder/flavor of choice)
2 eggs
1/4 cup coconut oil
1/4 cup chia seeds
1/4 cup maple syrup
1 cup dairy free milk (I prefer an unsweetened vanilla variety)
1 Cup trail mix of choice (I used this superfood trail mix)
1 tbsp. cinnamon
1 tsp. vanilla extract
Directions:
1.) Preheat oven to 350F. Line or grease 12 muffin tins.
2.) Combine the cassava, almond and coconut flours, collagen powder, cinnamon and chia seeds. Add in eggs, coconut oil, maple syrup, milk and vanilla extract. Once batter is mixed well, stir in trail mix.
3.) Scoop the batter into the muffin tin. Bake for 20-25 minutes, until golden brown and a toothpick comes out clean.
4.) Let cool for about 10 minutes, then enjoy! I love to top with some almond butter or coconut butter :)
