Recipe: Quick + Easy Egg Breakfast Muffins

This paleo and vegetarian recipe can be made quickly in the morning, or prepped the night or weekend before! Egg "muffins" or "bites" - whatever you would like to call them, are a great way to start your day with protein and increase your vegetable intake.


I like to think of them as little "personal frittatas." Get creative! Feel free to add or swap any veggies you have around the house, incorporate different spices and herbs, or add additional protein sources if they are a part of your diet (turkey bacon, cheese...).






Prep Time: 10 Minutes

Cook Time: 15 minutes

Servings: 12


Ingredients:

10 eggs

1 cup of spinach

1 chopped yellow bell pepper

1 chopped red bell pepper

1 cup of chopped mushroom

1 pinch sea salt

1 pinch fresh ground pepper

Dash of garlic powder

Dash of onion powder




Directions:

  1. Preheat oven to 375F. Line or grease two muffin tins with olive oil.

  2. In a large bowl, whisk the eggs together. Add sea salt, ground pepper, onion powder and garlic powder.

  3. Stir in peppers, mushroom, and spinach until thoroughly combined.

  4. Evenly distribute to make 12 muffins, filling roughly 2/3 to 3/4 of the way.

  5. Place in oven and cook for 15 minutes. Remove, let cool, and enjoy!
