My Staple Cauliflower Gnocchi Recipe

There are a LOT of questions when it comes to properly cooking Trader Joe's Cauliflower Gnocchi! I was very intrigued - I love cauliflower rice, pizza, and have even had it in my smoothie, so I knew I had to try it! I originally wasn't sure if this gluten free savior would live up to the hype I saw all over social media... but now I am hooked. I was advised by multiple friends to *not* follow the directions on the bag, otherwise the gnocchi will become soggy, so now I love to bake or roast it! This is my quick and easy staple recipe for cauliflower gnocchi that is vegan and gluten free. I use cauliflower gnocchi, organic garden vegetable pasta sauce, spinach, nutritional yeast, and spices to get the perfect flavors and textures! Depending on your diet, feel free to add cheese instead of nutritional yeast or a protein into the mix.





Prep Time: 10 minutes

Cook Time: 20 minutes

Servings: 1-2


Ingredients:

1 bag Trader Joes Cauliflower Gnocchi

1 cup spinach

3 tbsp. olive oil

garlic powder*

onion powder*

salt*

pepper*


*To your desired taste


Directions:

  1. Preheat oven to 400F.

  2. Place frozen gnocchi on a tray with olive oil, salt, pepper, garlic powder, and onion powder - mix together.

  3. Cook gnocchi for a total of 20-25 minutes. After 10 minutes, flip and toss the gnocchi, then let cook another 10-15 minutes until starts to brown.

  4. On stove, sauté spinach with olive oil and desired spices.

  5. Heat pasta sauce to a boil. Combine the sauce with spinach.

  6. Place cooked gnocchi in a bowl and pour sauce over top. Sprinkle with nutritional yeast, and enjoy!
