Recipe: Almond Flour Crackers (Paleo)

This recipe is the outcome of Whole Foods running out of the gluten free crackers I was craving during the recent snowstorm - true story! With just almond flour, an egg, seeds, seasonings and herbs to taste, these crackers are simple and flavorful! The nutritious and minimal ingredients also make these a great low carb snack for anyone monitoring their carbohydrate intake! Perfect for guacamole, hummus, salsa, or just about any dip or crunchy topping! You can also swap out the seasoning for a variety of flavors you desire, or whatever herbs you have on hand!


Ingredients: 1 Cup Almond Flour 1 Egg 1 Tbsp. Flax Seeds 1 Tbsp. Chia Seeds 1 Tbsp. Everything But The Bagel Seasoning (I used the Trader Joe's blend which is sesame seeds, poppy seeds, onion powder) Himalayan Sea Salt Ground Pepper




Directions: 1) Preheat oven to 350F 2) Combine almond flour, seeds, and herbs in a bowl. 3) Whisk one egg, and then pour over the dry mix. 4) Mix thoroughly until a dough forms. 5) Put a layer of parchment paper onto a cookie sheet and spread out the dough. Coat a top layer of parchment paper with avocado oil and place oil side down on dough, then with a rolling pin, roll out dough to be about 1/8th inch thick. Spray a knife or pizza cutter with non-stick spray and evenly cut crackers to desired size - I made 50 crackers. 6) Top crackers with salt and pepper, and then place in the oven for 12-15 minutes, or until the side of the crackers start to brown. 7) Let cool, and enjoy!
