Happy 2024, everyone! :)
One of my goals for the new year was to eat more balanced and satisfying snacks and meals throughout the day, and these oatmeal cups have been the perfect addition to my weekly meal prep! These are a great breakfast, or an afternoon snack on the go.
With collagen (or protein powder), oats, and nut butter, you are provided with the perfect balance of protein, complex carbs and healthy fats!
In addition, I love to add the Sakara Life Metabolism Powder. This chocolate flavored powder contains L-Glutamine for gut health, horsetail extract to counteract bloating, kelp extract to support metabolic health, black pepper for digestion, and the Ayurvedic herb, Gymnema Sylvestre to support a healthy blood sugar and nix cravings. I mix it into my coffee every morning, and these oatmeal cups are another great way to incorporate the Metabolism Powder's benefits!
You can get creative with tailoring the recipe to your tastebuds - I like to add blueberries and chocolate chips, but you can also add chopped nuts or any other fruit you prefer! Or, if you aren't in the mood for chocolate, the recipe can be made with a vanilla protein powder.
Ingredients:
1 mashed banana
2 eggs (can use a flax egg if vegan)
1/2 cup non dairy milk
2 tbsp nut butter
2 scoops chocolate collagen (or plant based protein- sub 1/2 cup nut butter if no protein)
2 scoops Sakara Life Metabolism Powder (20% off Sakara with code

2 1/2 cups gluten free rolled oats
1 tsp vanilla
1 tsp baking powder
1/2 cup blueberries
1/4 cup dairy free chocolate chips
Dash of cinnamon
Directions:
Mash a banana and add eggs, milk, nut butter into the bowl.
Add in the dry ingredients and mix thoroughly.
Bake at 350F for 18-20 mins. Makes 8-10 muffins depending on size.
