Recipe: Pumpkin Spice Latte

Now that the infamous Pumpkin Spice Latte is back on the menu at Starbucks and pumpkin-everything has taken up your social media feeds, I thought it was time to offer a healthier version! Remaking the PSL is easy because pumpkin itself is a true superfood, as I have covered in my recent blog post (I promised pumpkin recipes were on the way!)

Nature provides many flavors and spices that are even more potent than the artificial syrups and sugars used in the commercialized beverage. Start your day by getting your caffeine fix, blood sugar balancing protein, and metabolism boosting spices! This recipe will give you the seasonal comfort you desire, with added nutritional benefits :)



Ingredients:

1-2 Cups of freshly brewed coffee*

1/4 Cup pumpkin puree

1/4 Cup dairy free milk

1 Scoop Primal Kitchen Vanilla Collagen Fuel (optional - I like it to thicken and add foam)1/2 tsp cinnamon

1/8 tsp nutmeg

1/8 tsp allspice

1/8 tsp cloves

1 tbsp. coconut butter

1/2 tsp vanilla extract

Sweetener of choice

-A few drops of liquid stevia if limiting carbs

-1 tbsp. of maple syrup (vegan) or honey


*If trying to limit coffee intake, feel free to swap coffee for spiced chai tea.

** If you wish to keep this recipe vegan but still want added protein or thickness, try adding a clean, plant based vanilla protein powder, such as Sunwarrior.


Directions:

1.) Brew coffee.

2.) Place all ingredients in a blender. Blend until smooth. Serve hot - enjoy :)
